It takes minimal time to make, bound to leave all your house guests wanting more, just a few various ingredients and lasts more than a week in the fridge (that’s if it doesn’t get devoured before then!). If you love Gingernut biscuits then you will love this Christmas Rocky Road recipe I’ve put together. Featuring crunchy gingernut biscuits, soft marshmallows, delicious raspberry lollies, almonds and milk chocolate. Scattered on top for an extra sweet finish, broken candy canes and Christmas M&Ms. Those toppings are optional, you could even add them into to the mixture

Christmas Rocky Road
Ingredients
- 450 g milk chocolate
- 100 g marshmallow
- 100 g almonds
- 100 g gingernut biscuits (roughly crushed)
- 150 g ripe raspberries lollies (used Allen)
- 3-4 small candy canes
- Chrismas M&Ms (optional)
Instructions
- Combine marshmallows, raspberries, almonds, gingernut biscuits in a large bowl. Mix to combine
- Line a slice tray with baking paper
- Melt chocolate as per your desired method (stove top or microwave)
- Pour the melted chocolate over the marshmallow, raspberries, almond and gingernut mix. Mix ingredients till well combined
- Pour into the lined slice tray.
- Place on top broken candy canes and scatter Christmas M&Ms.
- Refrigerate till setCut into small pieces and ENJOY!!!
