It is the most wonderful time of the year! The festive season is most certainly upon us, isn’t it just such magical time?
Amongst the Christmas shopping, present wrapping, there is also the food planning. Are you hosting Christmas in your home this year? Or do you need a delicious dessert to take with you? Well I have you covered with this yummy pavlova recipe.
All ingredients are from the Fresh Food Precinct at Highpoint Shopping Centre; the one stop destination for all fresh local ingredients and yummy treats. I stopped by Graina, your go to store to buy all your healthy pantry staples in bulk or buy just the amount you need. Graina has everything from flours, to loose leaf tea, to nuts, dried fruits, chocolates and so much more. I stopped by Marketplace Fresh for all finest fresh food produce, eggs, specialty goods and gourmet yoghurts. Lastly Woolworths for all other needs.
Pavlova is my all time favourite dessert especially on a hot summer Christmas day. Taking inspiration from Donna Hay’s Raspberry Swirl Pavlova Wreath I have given a little fresh twist on this one with greek yoghurt, fresh berries and mini pudding balls, which remind me of Christmas at my Nana’s house! Refreshing, light and fluffy this Pavlova will certainly create a feature on your table this Christmas.
Pavlova Recipe
Pavlova Christmas Wreath with Pudding Balls
Pavlova Ingredients
225ml Egg Whites
1 and 1/2 Cups castor sugar
1 and 1/2 teaspoons white vinegar
2 teaspoons Cornflour
Pavlova Topping Ingredients
500gm Natural Greek Yoghurt
Pistachios, Dried Strawberries
Fresh mint
Fresh raspberries/blackberries
Pudding Balls
Christmas Pudding (Woolworths Gluten Free)
150gm Dark Chocolate (or Milk Chocolate if preferred)
Pavlova Method
Preheat oven to 150°C (300°F). Draw a 22cm circle on a sheet of non-stick baking paper and place it on a baking tray.
Place the eggwhite in the bowl of an electric mixer and whisk on high speed until stiff peaks form.
Gradually add the sugar, 1 tablespoon at a time, whisking for 30 seconds before adding more. Scrape down the sides of the bowl and whisk for a further 6 minutes or until stiff and glossy.
Place the vinegar and cornflour in a small bowl and mix to combine. Add to the meringue and whisk for 2 minutes or until glossy and combined
Place 12 heaped spoonfuls of the meringue mixture on the tray around the inside of the circle to create a ring.
Reduce the oven temperature to 120°C (250°F) and bake for 1 hour or until crisp to the touch.
Turn the oven off and allow the pavlova to cool completely in the oven with the door closed.
Pudding Balls
Place pudding a large bowl and break down with a spoon/fork.
Melt Chocolate with your preferred method. Add half the melted chocolate to the mashed up pudding mix. Mix well to combine.
Roll the combined pudding and chocolate mixture into balls and place aside on foil lined tray.
Top the pudding balls with remaining chocolate. Decorate with Pistachios and freeze dried strawberries. Place in the fridge to set
Putting the Pavlova Together
Place the pavlova wreath on a cake stand or plate. Top with the Natural Greek Yoghurt and sprinkle with the chopped pistachios and freeze-dried strawberries. Carefully place Pudding Balls and extra fresh raspberries/blackberries if you wish.
Serve and enjoy!
